Ingredients
Spaghetti:
. 2 eggs
. 1 teaspoon salt
. 2 cups all-purpose flour
. 1/4 cup of water
Pesto Sauce:
. 2 cups packed fresh basil leaves
. 3 cloves garlic
. 1/4 cup pine nuts
. 2/3 cup extra-virgin olive oil, divided
. Kosher salt and freshly ground black pepper, to taste
. 1/2 cup freshly grated Parmesan cheese
. 1/4 cup pine nuts

Spaghetti:
1. In a large bowl, combine flour and salt. Make a well in the flour, add the slightly beaten egg, and mix. Mixture should form a stiff dough. Stir in water.
2. On a lightly floured surface, knead dough for about 3 to 4 minutes. With a pasta machine or by hand roll dough out to desired thinness. Use machine or knife to cut into strips of desired width.
3. Cook in boiling water for 3 minutes.
Pesto Sauce:
1. Combine the basil, garlic, and pine nuts in a food processor and
pulse until coarsely chopped.
2. Add oil and cheese and process until
fully incorporated and smooth. Season with salt and pepper.
